Ramen buns

  • 1 package ramen noodles (no seasoning packet)
  • 1 egg
  • Salt and pepper
  • Sesame oil, for browning
  • 2 ramekins, as moulds

  • A handful of ground beef (amount not given)
  • ½ Vidalia onion, thinly sliced
  • 1 Tbsp shoyu sauce
  • 1 scallion, thinly sliced
  • Fresh arugula

Method

  1. Boil the noodles, drain and cool.
  2. Beat the egg with salt and pepper, mix in the noodles and divide between two ramekins. Cover, press down with a weight such as a can, and chill 15–20 minutes.

  4. Cook over high heat about 4–5 minutes a side for medium-rare.
  5. Brown the noodle buns gently in a little sesame oil over low heat.
  6. Build: noodle bun, arugula, patty with onions, shoyu sauce, scallions, noodle bun.
