Ingredients

Green chiles

  • 3 cups roasted, peeled and chopped New Mexican green chiles
  • A splash of water or beef stock

Burgers

  • 2 lb (about 2¼ lb) fresh-ground 80/20 chuck
  • Peanut oil or other neutral oil
  • Salt and black pepper
  • White cheddar, sliced
  • 6 seeded soft white buns, toasted

Method

  1. Warm the chiles in a covered saucepan with just a splash of water or stock until hot. Keep covered.
  2. Divide the beef into 6 portions (about 5½ oz / 5½ oz) and press each gently into a ring mold on parchment. Keep the grind loose.
  3. Heat a few drops of oil in a cast iron skillet over medium-high until it just smokes. Only now season both sides well.
  4. Sear 4 minutes without touching. Flip when red juice shows on top.
  5. Lower to medium and cook 6½ minutes more. After 4 of those, pile on chiles and a slice of cheese and cover to melt.
  6. Serve on the toasted buns. Motz says it needs nothing else.
