Ingredients

Burgers

  • 1½ lb 75–80% lean ground beef, shaped into four 6 oz patties
  • Salt and pepper
  • Neutral oil, for searing
  • ¼ cup unsalted butter, plus more for the buns
  • ½ bunch thyme
  • 4 slices American cheese
  • 4 large seeded buns

To dress

  • Mayonnaise
  • Yellow mustard
  • 1 red onion, cut into ¼ in rings
  • 1 large heirloom tomato, in ¼ in slices, with flaky salt
  • Boston bibb lettuce
  • Dill pickles

Method

  1. Shape the patties about 25% wider than the buns; they shrink as they cook.
  2. Toast the buns cut-side down in bubbling butter until golden, 2–3 minutes.
  3. Season the patties well. Sear in a little oil in a hot stainless pan, pressing for full contact, until crusty, 2–3 minutes.
  4. Flip, lower the heat to medium, add the butter and thyme, and baste with the foaming butter until done to your liking (135°F / 135°F for medium-rare). Melt the cheese on top.
  5. Dress the buns with mayo and mustard, then add lettuce, tomato, onion, pickles and the patty.
