Cheese is griddled around the patty into a crisp, lacy frico “skirt”.
The recipe
How to make it
1 serving
Ingredients
Burger
- 6 oz 75/25 ground beef
- 1 tsp kosher salt
- 1 tsp black pepper
- 2 cups shredded cheddar
- 1 hamburger bun
Burger sauce
- ½ cup ketchup
- ½ cup yellow mustard
- ¾ cup mayonnaise
- 2 tsp Worcestershire sauce
- Salt and pepper
Method
- Heat a skillet over medium-high heat. Shape and season the patty.
- Press it into the pan for full contact and cook 3–4 minutes a side.
- Near the end, pile the shredded cheddar onto and around the patty, set the top bun on it and cover the pan. The cheese melts and crisps into a wide skirt.
- Sauce: whisk the ketchup, mustard, mayo and Worcestershire together and season. It makes far more than one burger needs; it keeps in the fridge.
- Toast the bottom bun, sauce the top, and assemble.
